Canadian Bannock Fried Bread

Bannock is a Native fried bread. This bread can be used as hamburger buns. You can adjust the size as needed.  Leftover bannock can be eaten on its own or with peanut butter, jams, maple syrup or honey.

4 cups unbleached all purpose flour
1/4 cup granulated sugar
3 Tablespoons baking powder
2 teaspoons kosher salt (or 1 teaspoons regular table salt)
2 to 3 cups cold water
Vegetable oil for frying

Sift together flour, sugar, baking powder and salt. Stir in enough water to form a sticky dough.  Heat 1/4 inch of vegetable oil in a large skillet over medium heat. Ladle a scant cup of dough into the hot oil for each bannock, shaping a circle about 4 inches wide.  fry patties until golden brown on each side and puffed up, about 2 to 3 minutes per side.  Transfer to a rack and repeat with remaining dough.  Makes 8 to 12 bannocks.
