Sticky Toffee Bacon

Make sure you use parchment paper or foil on the baking sheet, or you will spend forever cleaning up.

1 pound thickly sliced bacon (450 g)
4 Tablespoons pure maple syrup - divided
1 Tablespoon cracked black pepper

Preheat oven to 425 degrees F.

Lay bacon strips snugly but not overlapping, on a rack over a parchment lined baking sheet.  Brush with 2 Tablespoons maple syrup and top with all the pepper.  Bake for 10 minutes or until fat has rendered.  Brush with remaining 2 Tablespoons maple syrup and bake for another 10 to 12 minutes or until bacon is crisp and slightly caramelized. Serves 6.
