Senegal Fresh Chili Mangoes with Mango Ice Cream

The best mangoes are from May through July, when the luscious Ataulfo mango variety is available.

3 mangoes
1/4 teaspoon grated lime zest
2 Tablespoons lime juice
1/4 teaspoon chili flakes
1/2 cup chopped flaked coconut
1 pint mango ice cream

Peel mangoes and cut into thick slices.  Sprinkle with lime zest, lime juice, chili flakes and coconut.  Stir together gently.

Divide among 4 plates and top with mango ice cream.  Serves 4.

The Ataślfo Mango, also called young, baby, yellow, honey, Adaulfo, Adolfo, or Champagne is a mango cultivar from Mexico.
