Butter Pecan Tassies (Miniature Pecan Pies)

These little morsels are always a joy to serve. They are lovely for a luncheon buffet.  Use hors d'oeuvre size muffin pans.

DOUGH:

1 cup butter, softened (2 sticks)
1 package (8 ounce) cream cheese (1 cup)
2 cups all purpose flour

Beat together butter and cream cheese until blended.  Beat in flour until blended.  Wrap dough in floured wax or parchment paper and shape into a 6-inch circle. Refrigerate for several hours or until firm.

Pinch off small pieces of dough and shape them into 1 1/2 inch balls.  Place each ball in a muffin cup and press dough on the bottom and sides, lining cup evenly.  (Use hors d'oeuvre size muffin tins.)  Spoon 1 teaspoon Butter Pecan Filling into each tassie, filling them almost to the top.

Preheat oven to 350 degrees F.  Place oven rack in the center of the oven.

Bake at 350 degrees F. oven for about 20 minutes or until filling is set and edges are beginning to brown.  Yields 4 dozen tassies.

BUTTER PECAN FILLING:

2 large eggs, beaten
2 Tablespoons melted butter
1 1/2 cups brown sugar
1 cup chopped pecans

Beat eggs, butter and sugar until blended.  Beat in the chopped pecans.

NOTE: These freeze well.  Wrap in double plastic bags and remove wrappers while defrosting.
