Apple Glazed Pork Tenderloins with Brandied Cream Apples

Serve this excellent meal for family or a dinner party. Very simple and quick to make.  Juicy pork accompanied with brandied apples.

2 pork tenderloins, about 1 1/2 to 2 pounds Each. Sprinkle with salt, pepper, garlic powder and paprika

1 cup apple jelly
1/4 cup orange juice
2 teaspoons Dijon mustard

Preheat oven at 350 degrees. F.
  Place oven rack in the center of oven.

Place pork in a shallow roasting pan, and bake at 350 degrees F. oven for about 45 minutes.  Meanwhile, stir together the apple jelly, orange juice and mustard until blended.

Baste pork with apple jelly mixture, and continue, baking and basting, until meat thermometer, inserted in the center of the meat registers 170 degrees. F. about 45 minutes, depending on the size of the roasts.

To serve, cut into slices and serve with Brandied Cream Apples on the side.  Serves 6 to 8.

BRANDIED CREAM APPLES:

4 Tablespoons butter
1/2 cup sugar

4 apples, peeled, cored and thinly sliced

1 Tablespoon brandy
1/2 cup whipping cream (heavy cream)

In a large skillet, melt butter with sugar.  Add the apples and saute until apples are tender and syrup is caramelized.  Add the brandy and cream and continue cooking and stirring until nicely blended, about 5 minutes.  Serve warm.

NOTE: Everything in this recipe can be prepared in advance with the following considerations.  Prepare pork, just slightly underdone, about 160 degrees F. on the meat thermometer.  Before serving, bake for about 30 minutes, basing with glaze.  Apples can be prepared earlier in the day and reheated at time of serving.
