Easter Bread Loaf with Cherries and Almonds

Ukrainian  Easter Bread Loaf with Cherries and Almonds:

A very delicious bread to serve at Easter.  Sweet with butter, fruits and nuts.

1/4 cup warm water (105 degrees F. to 115 degrees F.)
2 Tablespoons active dry yeast (2 pkg.)
1 Tablespoon sugar

3 large eggs, beaten
3/4 cup melted butter
1 cup scalded milk
1/3 cup sugar
1 teaspoon vanilla
3/4 teaspoon salt

5 cups all purpose flour

1 cup chopped mixed fruits (use cherries, raisins, orange peel)
1/2 cup finely chopped toasted almonds

In a glass measuring cup, stir together warm water, yeast and sugar.  Allow to stand until bubbly.  If it does not foam, yeast is not  active and should be discarded.

In a large mixer bowl, combine eggs, melted butter, milk, sugar, vanilla, salt and frothy yeast mixture and beat for 1 minute.  Gradually add 5 cups flour, beating, until a semi-soft dough is formed and clears the bowl.

If you use a dough hook,
beat about 10 minutes, until dough pulls away from sides of bowl. If you knead by hand, add a little more flour as you knead for about 9 to 10 minutes.

Lightly oil a large bowl and turn dough into it to oil the top.  Cover bowl with plastic wrap and place in a warm place (85 degrees F.) until double in volume.  Punch dough down and knead in the fruits and nuts.  Shape into a ball and place on a sheet of parchment paper.  Let rise in a warm place until double in volume.  Brush top with beaten egg and place parchment paper with bread on a baking sheet. Bake in a preheated 350 degrees F. oven for about 30 minutes or until loaf is nicely browned.  Cool on a rack.  Glaze is optional, but if you do, decorate top with additional cherries and slivered almonds.

GLAZE: Beat together 1 cup sifted confectioners' sugar (icing/powdered) with 2 Tablespoons cream and 1/8 teaspoon vanilla.  Drizzle over cooled bread.
