Ukrainian - Marinated Three Bean Salad  (Zeleny, Zhovty, Bib Salat):

For the best flavour, prepare this salad a day before serving so that the beans have a chance to marinate.  Be sure to bring this salad to room temperature before serving.

1 cup red wine vinegar
3/4 cup sugar
1/2 cup vegetable oil
2 garlic cloves, minced
1 teaspoon salt
Pinch black pepper

8 ounces fresh green beans, trimmed and cut into 1-inch lengths
8 ounces fresh yellow wax beans, trimmed and cut into 1-inch lengths
1 (15.5-ounce) can red kidney beans, rinsed (398 mL)
1/2 red onion, chopped medium
1/4 cup minced fresh parsley

Heat the vinegar, sugar, oil, garlic, 1 teaspoon salt, and a pinch of pepper in a small saucepan over medium heat until the sugar dissolves, about 5 minutes.  Pour into a bowl large enough to hold the salad and set aside.

Cook the green and yellow beans in 3 quarts boiling water seasoned with 1 Tablespoon salt until crisp-tender, about 5 minutes.  Plunge the beans immediately into ice water and allow to cool for 2 minutes before draining.

Stir all of the beans, the onions, and the parsley into the vinegar mixture and refrigerate at least 8 hours to let the flavours meld.  Bring to room temperature for 30 minutes and season with salt and pepper to taste before serving.  Serves 8 to 10.

NOTE: This salad can be prepared, covered, and refrigerated up to 2 days in advance.  Before serving, bring to room temperature and season with salt and pepper to taste.
