LINYVI HOLUBTSI (Lazy Sauerkraut Cabbage Rolls)

For cooks too swamped with work to make cabbage rolls, here is a recipe that provides a good, flavorful supper dish.  Make this dish ahead and cook it when needed.

Serves 4-6.

1 1/2 cups washed rice
2 1/2 cups boiling water
1 tsp. salt
1 Tbsp. butter
1/2 cup bacon, diced
1 medium onion, diced
1 Tbsp. chopped dill weed
2 1/2 cups partially drained sauerkraut
1 3/4 cup tomato juice (divided)
Salt and pepper to taste
2 Tbsp. butter
1/2 cup buttered crumbs (optional)
4-5 strips bacon (optional)

Combine the rice, water, salt, and 1 Tbsp. butter.  Cover tightly, reduce the heat, and simmer for about 8-10 minutes.  Shut off the heat and let stand tightly covered, for another 10-15 minutes.  The rice should be fluffy and cooked.

In a large skillet, fry the diced bacon and onion until translucent.  Add the dill weed, the sauerkraut, and 1/2 cup tomato juice, and cook for about 15 minutes, stirring occasionally. Season to taste.

Preheat oven to 350 F.

Butter an ample baking dish and layer the sauerkraut mixture and top with rice mixture.  Repeat layers ending with the sauerkraut.  Pour in the remaining tomato juice until level with the top layer.

Top with bread crumbs, or if you prefer, strips of bacon.  Cover and bake for about an hour, until the flavors are well blended.

VARIATION:


Add 1/2 cup chopped ham to the rice.

Add 1 cupful of chopped mushrooms to the sauerkraut.

Add 1 cup chopped, cooked chicken to the rice.

Sweet or sour cream may be used as part of the liquid.

LAZY CABBAGE ROLL CASSEROLE:

This is a perfect casserole for those busy cooks who don't have time to spend all day in the kitchen.

4 bacon slices, diced

1 1/2 pounds lean ground beef
1 cup chopped onion

1 1/4 cups tomato juice
1 (10 oz.) can of condensed tomato soup (184 mL)
1/2 tsp. salt
1/4 tsp. pepper

8 cups coarsely shredded cabbage, lightly packed

1/3 cup long grain white rice


Cook bacon in large frying pan on medium until crisp.  Transfer with slotted spoon to paper towels to drain.  Set aside.

Heat 2 tsp. drippings in same pan.  Add beef and onion.  Scramble fry for about 10 minutes until beef is no longer pink.  Drain.

Add next 4 ingredients.  Stir.  Remove from heat.

Spread cabbage in ungreased 9 X 13 inch pan.  Press down lightly.

Sprinkle bacon and rice over cabbage.  Spread beef mixture on top.  Cover with greased foil.  Bake in 350º F. oven for about 1 1/2 hours until rice is tender and liquid is absorbed.  Serves 6.

ALMOST CABBAGE ROLLS CASSEROLE:

With the flavour of cabbage rolls but a fraction of the work, this easy casserole is delicious served with sour cream on the side.

1 pound lean ground beef (or mixture of beef and pork)
3/4 cup long grain rice
1 large onion, chopped
2 cloves garlic, minced
1/2 tsp. salt
1/4 tsp. pepper
8 cups coarsely chopped cabbage

1 can (28 oz./796 mL) tomato sauce
1/4 cup cider vinegar
2 Tbsp. packed brown sugar
1 Tbsp. dry mustard


In large bowl, mix together beef, rice, onion, garlic, salt and pepper.

In small bowl, stir together tomato sauce, vinegar, brown sugar and mustard.

Layer 1/3 of the cabbage in 12 cup deep casserole.  Arrange half of the beef mixture on top.  Cover with another 1/3 of the cabbage.  Top with remaining beef mixture and remaining cabbage.

Pour tomato sauce mixture over top, but do not stir.  (Casserole will be quite full.)  Cover and let stand at room temperature for 20 minutes.  Bake in 325º F. oven for 2 hours, without stirring.  Makes 4 to 6 servings.
