Haitian Hot Pepper Sauce

Pepper sauces can be found on the table of virtually every Caribbean restaurant.  Every island in the Caribbean has its own version of a hot pepper sauce.  This Haitian version combines fruits, as well as chiles, to produce a hot and sweet sauce.

3 Habanero OR 6 Serrano chiles, stems removed, chopped
1/2 cup papaya, chopped
1/2 cup raisins
1 cup finely chopped onions
3 garlic cloves, minced
1/2 teaspoon turmeric
1/4 cup malt vinegar

Combine all the ingredients in a sauce pan and bring to a boil, stirring constantly.  Reduce the heat and cook for an additional 5 minutes.  Put the mixture in a blender and puree until smooth.

This sauce goes well with fish, poultry, and pork.  It can be added to soups and chowders.  Makes 2 cups - Heat Scale: 6.
