Czech--Crepes with Plum and Slivovitz Filling

CREPES:

4 large eggs
1 cup whole milk
3/4 cup all purpose flour
1 teaspoon sugar
2 teaspoons melted butter, cooled slightly
Pinch salt

4 teaspoons unsalted butter - divided for the pan

FILLING:

1 1/2 cups ripe plums, halved, and pits removed
Pinch cinnamon
3 Tablespoons Slivovitz (plum brandy)
2 teaspoons sugar
4 Tablespoons plum jam, of good quality

1 1/2 cups walnut ice cream
Confectioners' sugar, for dusting (Icing/powdered)

FOR THE CREPES:  In a bowl, combine eggs and milk, gradually beat in flour, sugar, melted butter and salt.  Beat until smooth, melt 1 teaspoon of butter in an 8-inch skillet, pour a thin layer of batter into skillet about 1/3 cup and quickly swirling batter to coat bottom of pan and cook crepes on both sides until crisp and lightly browned.  Transfer cooked crepes to warmed serving plates, and repeat with remaining butter and batter.

FOR THE FILLING:  In a medium saucepan, place plums, cinnamon, slivovitz and sugar, cook until plums are soft, about 15 minutes.  Transfer plum mixture to a blender and puree 1 minute, then transfer to a glass bowl, stir in plum jam and set aside.  NOTE: Add more sugar if sweeter filling is desired.

Spoon 2 to 3 Tablespoons of plum filling on top of each crepe, fold crepe in half and spoon 2 scoops of walnut ice cream on top of crepes, sprinkle with confectioners' sugar and serve.  Serves: 4.
