Ukranian Daughters Cook Book recipe for Studenez.

My Mother in Law gave me a cook book and I do not have it any more.  It had a Head Cheese recipe.
Would any one have this recipe and could they forward it to me or post it?  Thanks

Welcome rab23465 to Ukrainian Classic Kitchen.  Here is the recipe from Ukrainian Daughters' Cookbook

STUDENETZ / KHOLODETS:

3 pigs feet
3 pork hocks
2 Tablespoons Morton salt (table salt)

1 medium onion, sliced thinly
1 clove garlic
1 bay leaf
2 Tablespoons Morton salt
1 clove garlic

Cut pigs feet in half lengthwise, soak hocks and pigs feet in cold water and 2 Tablespoons of salt overnight.  Drain, then scrape and wash hocks and feet thoroughly.

Place the meat in a large kettle, and 2 Tablespoons Morton salt, cover with cold water and bring to boil.  Skim, add onion, garlic, and bay leaf then simmer very slowly without a cover.  This is very important, rapid boiling will make broth milky.  Continue to boil slowly until meat comes off bones easily.  Separate the meat from the bones, chop to desired cubes.  Place meat in oblong glass pans.  Crush 1 clove of garlic and add to juice and stir, then strain juice through sieve over chopped meat, stir slightly and chill thoroughly.  Before serving scrape fat off top and serve in slices or squares.
