New Zealand-No Bake Kiwi Cheese Cake

New Zealand - Kiwi Cheese Cake:

CRUMB BASE:

180 grams gingernut biscuits, crushed (ginger snap cookies 6 ounces)
100 grams butter, melted (4 ounces)

FILLING:

4 large kiwi fruit
2 teaspoons lemon juice
500 grams ricotta cheese (1 pound)
1/2 cup castor sugar (superfine sugar)

1 Tablespoon gelatine
4 Tablespoons cold water
1 cup whipping cream, lightly whipped
Kiwi fruit slices for garnish

Thoroughly mix crushed biscuits and melted butter.  Press crumbs into the base of a lightly greased 20 cm (8 inch) spring form cake tin.  Chill until required.

Peel kiwi fruit, cut into 4, cut out seeds and discard.  Puree fruit in a blender or rub through a sieve.  Stir lemon juice into puree.

Place ricotta cheese in a large bowl, beat in sugar until smooth.  Stir in kiwi fruit puree.

Sprinkle gelatine over water in a small bowl.  Stir to dissolve over hot water, allow to cool.  Stir gelatine into cheese mixture then fold in whipped cream.  Pour into prepared cake tin.  Chill several hours until set.  Remove rim from tin and place cheese cake on a flat serving dish.  Decorate top with slices of kiwi fruit around the edges of cake.  Serves 6.
