Slow Cooker - Old Fashioned Creamy Macaroni and Cheese

Family pleaser that kids love. Use a 4 1/2 to 6 quart slow cooker. (4.5 to 6 L)

2 Tablespoons butter (30 mL)
1 onion, diced
1/3 cup all purpose flour (75 mL)
3 cups milk (750 mL)
3 cups shredded old Cheddar cheese (750 mL)
2 teaspoons Dijon mustard (10 mL)
3/4 teaspoon salt (4 mL)
2 cups macaroni (500 mL)
1/4 cup chopped fresh parsley (50 mL)

In large saucepan, melt butter over medium heat; fry onion, stirring occasionally, until softened, about 3 minutes. Add flour; cook, whisking, for 1 minute.  Whisk in milk; cook, whisking, until bubbly and thickened, about 8 minutes.  Add Cheddar cheese, mustard salt and pepper.  Scrape into slow cooker.

Meanwhile, in large pot of boiling salted water, cook macaroni until tender but firm, 8 minutes or less.  Drain and add to slow cooker; stir to combine.

Cover and cook on LOW until bubbly, about 3 hours.  Sprinkle with parsley. Makes 4 to 6 servings. NOTE:  I found 1 hour at LOW was more than enough.
