Cream Waffles

CREAM WAFFLES:

This American dessert, brunch dish, and supper standby were introduced in the 1800's by the Dutch, and a waffle iron carved with a bride's initials and wedding date was a customary wedding gift.  Serve the waffles here with butter and honey or maple syrup, or with whipped cream and berries.

5 large eggs
1/2 cup sugar
1/2 teaspoon salt
1 cup all purpose flour
1 cup sour cream
1/4 cup butter, melted

In the large bowl of an electric mixer, beat the eggs and sugar on high speed until mixture forms ribbons when beaters are lifted from the bowl, about 10 minutes.  Beat in the salt.  Sprinkle the flour over the batter and, with a rubber spatula, fold in the flour.  Fold in the sour cream and butter. Let mixture stand 10 minutes.  Heat a waffle iron, pour on batter, and bake waffles until crisp and light brown.  Makes 4 to 6 servings.
