Hawaii - Orange and Spinach Salad Molokai

1 pound raw spinach, washed, drained, and stemmed
1/4 pound fresh mushrooms, sliced lengthwise or 1 can (4 ounces) sliced and drained
1 (5 ounce) can water chestnuts, rinsed, drained and diced
4 navel oranges, peeled and diced

1/4 cup salad oil
2 Tablespoons vinegar
2 Tablespoons orange juice
1 Tablespoon soy sauce
1/4 teaspoon dry mustard
1/4 teaspoon salt
Dash of fresh pepper

Tear spinach coarsely into a large salad bowl.  Add mushrooms, water chestnuts, and oranges.  In a jar, combine oil, vinegar, orange juice, soy, mustard, salt and pepper.  Shake and pour over salad.  Toss well to coat solids with liquid.
