Ivory Coast - Chicken a la N'Gatietro - Fried Chicken with Peanut Butter Sauce

2 1/2 to 3 pound frying chicken, cut up
3 Tablespoons oil
1/2 cup chopped onion
3 green onions, sliced
1 large tomato, diced
1 Tablespoon tomato paste
1 teaspoon salt
1 teaspoon paprika
1 bay leaf
2 cups water
1 cup peanut butter

Brown chicken in hot oil in frying pan or Dutch oven.  Add chopped and sliced onions, tomato, tomato paste, salt, paprika and bay leaf to browned chicken.  Cover; cook over low heat for 5 to 10 minutes. Add water to chicken and simmer until chicken is nearly tender, 15 to 20 minutes more. Remove chicken mixture from heat.

Cream peanut butter with some of the chicken stock in mixing bowl; add stock until peanut butter is a light, creamy, smooth sauce.  Pour sauce over chicken; cover and cook over low heat for about 15 minutes or until chicken is tender.  Yield: 6 servings.
