NORWEGIAN - OLD FASHIONED FLAT CAKES:

These cookies, avletter, in their homeland, are the oldest known cookies in Norway.  They are baked in either an avlette or a krumkake iron.

2 cups heavy cream (whipping cream)
1 cup sour cream
1 1/3 to 1 1/2 cups water
1/4 teaspoon salt
2 teaspoons sugar
2 3/4 cups flour

In a large bowl, combine all of the ingredients and beat until the batter is smooth and the consistency of thick pancake batter.  Preheat the avlette or krumkake iron over medium heat until a drop of water sizzles when dropped on top.  Lightly brush the inside top and bottom of the iron with shortening, oil, or melted butter. One Tablespoon at a time, spoon the batter onto the center of the heated iron.  Close the iron and bake for 1 to 1 1/2 minutes, just until pale golden.  Remove from the iron and cool flat.  Stack them to serve o to store.  Makes 50 flat cakes.
