Poppy Seed Onion Rolls - Tsybulynyy Bulochky

Ukrainian - Poppy Seed Onion Rolls -  Tsybulynyy Bulochky

This makes a delicious dinner roll.  Best fresh from the oven.

DOUGH:


1 tablespoon sugar
1/4 cup warm water (105 F to 115 F)
1 tablespoon active dry yeast
1/2 cup buttermilk
3 tablespoons unsalted butter, at room temperature
1 egg
1 1/4 teaspoon salt
2 to 2 1/2 cups flour

FILLING:


3 tablespoons unsalted butter
2 medium size onions, finely chopped
1 tablespoon poppy seeds

Prepare Dough:  Combine sugar and warm water in 1 cup measure.  Sprinkle yeast over top; stir to dissolve yeast.  Let stand until foamy, about 10 minutes.

Beat together yeast mixture, buttermilk, butter, egg, salt and 1 cup flour in large bowl until smooth.  Stir in enough remaining flour, about 1 ˝ cups, to form soft dough.

Turn dough out onto floured surface.  Knead until smooth and elastic, 5 to 10 minutes, adding more flour as needed to prevent sticking.  Place in greased bowl, turn to coat.  Cover with oiled plastic wrap and towel.  Let rise in warm place, away from drafts, until doubled in bulk, about 1 hour.

Prepare Filling:  Heat butter in medium size skillet over medium low heat.  Add onion; sauté until soft, about 5 minutes.  Increase heat to medium; sauté, stirring constantly, until golden brown, about 2 minutes.  Stir in poppy seeds.  Let cool.

Punch dough down.  Roll out on floured surface with lightly floured rolling pin into 16 x 10 inch rectangle.  Spread with onion filling, leaving ˝ inch border along one long edge.  Starting with long side where filling is even with edge, roll dough up jelly roll style.  Pinch seam to seal.  Cut crosswise into 12 equal slices.  Lay rolls, cut side down, 2 inches apart on large greased baking sheet.  Press each roll to flatten slightly.  Cover with oiled plastic wrap.  Let rise in warm place, away from drafts, until doubled in bulk, about 45 minutes.

Preheat oven to moderate 375 F.  Bake rolls in preheated moderate oven 375 F. until golden brown about 12 minutes.  Serve warm. Makes 12 rolls.
