UKRAINIAN-SPICED HONEY CAKE WITH RAISINS & WALNUTS - MEDIVNYK:

A very nice cake to serve when the family gets together.  It's a delicious cake, not too sweet and just bursting with goodness.
Whole Wheat PASTRY flour is sold in health food stores and organic stores.

1/2 cup butter, softened
1 cup honey
2 eggs
1/2 cup milk
1/2 cup sour cream
2 teaspoons vanilla

2 1/4 cups whole wheat Pastry flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 cup raisins

1/2 cup chopped walnuts

Beat together first 6 ingredients until thoroughly blended, about 4 minutes.  Mix together next 7 ingredients and beat in until blended.  Spread batter into a greased 10-inch tube pan and sprinkle top with chopped nuts, pressing them lightly into the batter.

Bake in a 350º F. oven for about 40 to 45 minutes, or until a cake tester, inserted in centre, comes out clean.  Allow to cool in pan.  When cool, remove from pan and cut into wedges to serve.  Serves 8 to 10.
