Hash Brown Potatoes

3 cups chopped Cooked potatoes
1 1/2 Tablespoons all purpose flour
3/4 teaspoon salt
1/2 cup half and half cream (between 10.5% and 18% milk fat content)
4 Tablespoons butter - divided
Chopped parsley

Mix the cooked chopped potatoes with the flour and salt.  Add the half and half and blend well.

Heat half of the butter in a heavy skillet and pour in the potato mixture, spreading evenly.  Cook slowly until brown underneath.  Invert on a plate, add the remaining butter to the pan and gently slide the potatoes back into the skillet, cooked side up.  Brown the underside.  Serve garnished with parsley.  Serves 6.
