Armenian Beef Loaf

2 pounds fresh spinach, OR 2 (10-ounce) packages frozen chopped spinach
1 pound round steak, ground
3/4 cup finely chopped onions
Salt and freshly ground pepper to taste
1/2 teaspoon grated nutmeg
1/4 teaspoon cinnamon
1 cup cooked rice
2 large eggs, lightly beaten
3 bacon slices

Preheat the oven to 350 degrees F.

If fresh spinach is used, rinse it well in several changes of cold water.  Drain, place in a kettle, and cook in only the water that clings to the leaves. Drain and chop well.  If frozen spinach is used, just defrost it and squeeze out excess moisture.

Combine the spinach, beef, onions, salt, pepper, nutmeg, cinnamon, rice and eggs.  Pack the mixture into a buttered 9 X 5 inch loaf pan. Arrange bacon on top.  Bake for 1 hour, or until firm. Serve with a tomato sauce.  Serves 6.
