A very easy and decadent dessert. This is a famous dessert that has its origins at Eton College in England.  In "Mess" the legend is that a cook broke a meringue she had made and in trying to figure out some way to serve this to the students, she layered it with whipped cream and fruit.  If you wish you can buy the meringues to make it extra easy. To make superfine sugar you will add granulated sugar in a blender and blend until it becomes fine or buy quick dissolving sugar called berry sugar or superfine sugar.


2 large egg whites
1/2 cup superfine sugar
1 teaspoon lemon juice


1 cup raspberries
3 Tablespoons superfine sugar
2 Tablespoons lemon juice


1 cup whipping cream
1 Tablespoon superfine sugar
1 cup raspberries - divided

Preheat oven to 275 degrees F.

Beat egg whites in a bowl until frothy. Beat in sugar gradually 1 Tablespoon at a time, until incorporated.  Continue to beat until egg whites are thick stiff and very glossy (like shaving cream).  Beat in lemon juice.

Spoon six (2-inch) dollops onto a parchment lined baking sheet.  Bake for 1 hour or until crisp.  Cool meringues, then break into large and small pieces.  Reserve 1/4 cup for garnish.

Combine raspberries with sugar and lemon juice in a food processor and process until smooth.

Beat whipping cream with sugar until it holds soft peaks.  Reserve a few raspberries for garnish, then fold remaining raspberries and 1/4 cup sauce into whipped cream.

Place a spoonful of cream mixture in each of 4 parfait glasses.  Top with some crumbled meringue and a drizzle of raspberry sauce.  Repeat layers, finishing with reserved meringue and remaining raspberry sauce.  Garnish with reserved raspberries.  Serves 4.
