English Muffin Bread (Bread Machine)

This is a really good, easy way to get that English muffin taste and texture. Great bread for toasting, then slathered with butter and drizzled with honey.  There may be a sunken top to this bread.  Slightly heavier than most other bread machine breads, yet it is spongy and moist.  I baked my bread on medium crust. NOTE: There is no oil or butter in this bread.

SMALL:

3/4 cup plus 2 Tablespoons warm water
1 1/2 teaspoons sugar
3/4 teaspoon salt
1/8 teaspoon baking soda
2 cups bread flour
2 Tablespoons nonfat dry milk
1 teaspoon active dry yeast

MEDIUM:

1 1/4 cups warm water
2 teaspoons sugar
1 teaspoon salt
1/4 teaspoon baking soda
3 cups bread flour
3 Tablespoons nonfat dry milk
1 1/2 teaspoons active dry yeast

LARGE:

1 1/2 cups warm water
1 Tablespoons sugar
1 teaspoon salt
1/2 teaspoon baking soda
3 1/2 cups bread flour
1/4 cup nonfat dry milk
2 teaspoons active dry yeast

Use the BASIC CYCLE:  Place everything in order given.
