Horikhivnyk (Nut and Fruit Bars)
These tasty bars are great for Easter or any other occasion for the family.
CRUST:
1/2 cup butter (unsalted)
1/4 cup sugar
1/8 teaspoon salt
1 egg
1 1/4 cups sifted flour
FILLING:
1/2 pound sultana raisins
1/2 pound dates
1/2 pound walnuts
3 teaspoons lemon juice
2 eggs
1 cup sugar
Cream the butter with the sugar and salt; add the egg and beat well. Mix in the flour. Spread the dough evenly in a buttered 9 x 12 inch baking pan. Bake in a moderate oven 350 F. to 375 F. for about 10 to 15 minutes.
FOR THE FILLING: Chop the fruits and nuts very finely or (use the food processor. Mix in the lemon juice.
Beat the eggs, add the sugar gradually, and continue beating until light. Stir in the fruit nut mixture. Spread the filling over the partially baked crust. Bake in a moderate oven 325 F. for 30 to 40 minutes, or until set and done.
