Czech - Potato Soup (Bramborova Polevka)
4 large potatoes, peeled and diced
8 cups water
1 1/2 teaspoons salt
Freshly ground black pepper
1 1/2 Tablespoons butter
1 carrot,
coarsely grated
1 Tablespoon flour
1 Tablespoon chopped parsley
1/2 cup milk
1 egg yolk
Place the potatoes in a saucepan. Add the water and salt and pepper and cook for 20 minutes until the potatoes are tender.
Strain and reserve the cooking liquid.
Mash the potatoes and set aside.
Heat the butter in a pan, add the grated carrot and fry for 2 minutes. Reduce the heat, cover and continue cooking for 15 minutes.
Stir in the flour and cook for 1 minute.
Add the parsley and milk, bring to a boil and cook for 2 minutes.
Add the mashed potatoes and enough of the reserved cooking liquid to make a creamy soup.
In a small bowl beat the egg yolk, stir in a few Tablespoons of the soup and return egg mixture to the pot, stirring until smooth. Season to taste with salt and pepper. Serve hot. Serves 8.
