Czech - Potato Patties - Bramborove Smazenky

1 recipe Potato dumplings (recipe below)
2 eggs, beaten
1 cup bread crumbs
3/4 cup shortening

Prepare dough according to instructions, but omit croutons.  Roll out 1/2 inch thick, and cut into 2 1/2 inch circles.  Dip in eggs, roll in bread crumbs, and brown in hot shortening.  Serve with roasts, or as a meatless meal with vegetables.  Serves 4 to 6.

Potato Dumplings 111 (Hot Potatoes) - Bramborove Knedliky Z Horkych Brambor


2 pounds potatoes, peeled
Salt to taste
3/4 cup farina
1 egg
2 to 2 1/4 cups instantized flour
1/4 teaspoon single acting baking powder
2 cups croutons
1/2 cup butter, melted

Boil potatoes; drain.  Quickly add salt and farina, and mash smooth.  Add egg and flour mixed with baking powder, and knead well.  Knead in croutons (leave out for the above recipe).  Form into balls about 3 inches in diameter.  Boil in salted water for 15 minutes.  Remove with a skimmer and immediately tear open with 2 forks.  Serve with butter.  Serves 4 to 7.
