Norway - Herring Custard
2 salt herring (
each
weighing about 1 1/4 pound)
6 medium sized potatoes,
thinly sliced
Black pepper to taste
4 medium sized white onions, thinly sliced
3 eggs beaten
with 2 cups milk
Soak the salt herring in cold water for 12 hours, changing the water several times. Drain them; cut off heads and tails; remove skin and bones and cut the herring into 1/2 inch thick slices.
Butter a baking dish and place a layer of potatoes on the bottom (sprinkling each layer of potatoes with pepper), then a layer of herring, then one of onions, and so on, ending with potatoes. Pour the egg milk mixture over the layers. Bake, uncovered, in a preheated 375º F. oven for 40 minutes or until the custard is set and the potatoes are cooked. Serves 6.
