Cranberry Cheesecake with Walnut Crust

This is a luscious creamy cranberry cheesecake with walnut crust. I used a 10 inch springform pan instead of a 9 inch. Make sure your walnuts are fresh.


1 1/2 cups graham cracker crumbs
1/2 cup finely chopped walnuts
1/4 cup butter, melted (1/2 stick)
1 can (16 ounces) whole berry cranberry sauce


3 packages (8 ounces each) cream cheese, softened
3/4 cup granulated sugar
1/4 cup all purpose flour
3 eggs
1 cup sour cream
2 teaspoons vanilla extract


Sugared Cranberries (recipe follows)
Sliced kiwifruit, optional
Fresh mint leaves, optional

Preheat oven to 325 F.

In a small bowl, combine crumbs, walnuts and butter; mix well.  Firmly press crumb mixture over bottom of 9-inch springform pan.  Bake 5 to 6 minutes, or until golden.  Remove from oven; cool slightly.  Remove cranberry sauce from can to a bowl and stir well with fork. Spread cranberry sauce over crust; set aside.

Reduce oven temperature to 300 F.

In large bowl with electric mixer at medium speed, beat cream cheese, sugar and flour until smooth.  Beat in eggs, sour cream and vanilla until well blended; spread evenly over cranberry sauce.  Bake 1 hour, or until knife inserted 1 1/2 inches from edge comes out clean. (I baked mine for 70 minutes).  Turn off oven; leave cheesecake in oven with door ajar about 30 minutes, or until top is firm to the touch.  Cool on wire rack to room temperature.  Cover with refrigerate about 4 hours, or until well chilled. (I covered with paper towel then with plastic wrap.)

Just before serving, remove sides of pan and place cheesecake on serving plate.  Garnish with sugared cranberries, kiwi slices and mint leaves, if desired.

SUGARED CRANBERRIES:  In small bowl, place a small amount of light corn syrup.  Add fresh cranberries, a few at a time, turning to coat.  Place berries in bowl of granulated sugar.  Using a fork, remove cranberries from sugar and place on wire rack until set.
