That is to state more clearly...Recipes to make sausage.

Oh, and traditional sugar/brined pork butt (Ham today).

Hello Hutsul and welcome to Ukrainian Classic Kitchen. Here is one recipe for brining meat, not Ukrainian because I don't have a recipe, but you could try it.

BASIC BRINE FOR RED MEAT:

The lemon juice in this brine is good for meats that are somewhat fatty, such as bear, javelina, wild boar, or pork.  Use this recipe for thick steaks, roasts, or chops.

2 quarts water (boiled and cooled)
1/2 cup pickling salt
1/2 cup sugar
1/4 cup lemon juice
1/2 head of garlic - for pork - optional
1 to 2 whole allspice berries-crushed - for pork - optional
1 juniper berry-crushed - for pork - optional

Combine ingredients.  Brine meat overnight.
