Royal Viking Almond Cookies

This idea was borrowed from the Royal Viking cruise line.  This is a quick and easy one for you to feature at a fancy tea or reception. If you love chewy and almond tasting cookies these are for you.  These spread and puff up when baking. My son's favourite.

1 (7 oz.) package almond paste
1/4 cup granulated sugar
1/4 cup sifted powdered sugar
1 egg white
Sliced almonds

Preheat oven to 350°F.  Line 2 baking sheets with parchment paper; lightly grease the paper.  

Using your fingers, crumble the almond paste into a medium bowl.  Add granulated sugar, powdered sugar and egg white.  Using an electric mixer, beat on medium speed until smooth.  Drop slightly rounded measuring teaspoons of dough (use a rounded tipped knife to scoop out), about 2 inches apart, on prepared baking sheets.  Top each cookie with 1, 2 or 3 sliced almonds.  Bake in preheated oven 10 to 12 minutes or until a light golden color.  Makes about 30 cookies.  Cool completely on baking sheet or they will stick if you pull them up too soon or remove parchment paper with cookies to a cooling rack.
