Macaroni Ukrainian Style

1/2 pound whole wheat macaroni or white macaroni (1/4 kg.)
8 Tablespoons butter (divided)
1 1/2 cups sour cream
1 pound cottage cheese (1/2 kg.)
1 cup shredded Cheddar cheese
1 red onion, thinly sliced
2 scallions, chopped
1 green pepper, seeded, deribbed and chopped
2 cups shredded cabbage
1/2 pound fresh mushrooms, sliced
1 carrot, finely chopped
1 tsp. caraway seeds
2 Tbsp. soya sauce or tamari sauce
freshly ground black pepper

Combine the sour cream, cottage cheese, Cheddar cheese, onion, scallions and green pepper.

Saute the prepared cabbage, mushrooms, carrot and the caraway seeds in 4 Tablespoons of the butter.

Boil the macaroni in salted water until barely done.  Drain and mix with the remaining butter.  Combine everything.  Add the soy sauce or tamari sauce and lots of freshly ground black pepper.

Place in a buttered casserole, cover, and bake in a preheated 350º F. oven for 40 minutes.  Serve with fresh tomato slices sprinkled with basil. Serves 6 to 8.
