Looking for a recipe

I'm not exactly sure if this recipe is widely known...but I have had no luck finding it.  Maybe someone can help?

My baba used to make these and referred to them as "pe-roosh-kay" and they were like a very small baked perogy that you would bake individually and then probably freeze and then bake again in a cream dill sauce in a dutch oven.  I used to be able to buy them (originally from Edmonton, now live in Ottawa) and would like to learn how to make them.

I should note that they are small (about the size of a small perogy) and not really puffy.. I tried a few recipes from here for papushky (i think they were called) but they puffed up way too large.  I suspect that this recipe does not call for yeast.

Any help would be greatly appreciated.

Probably your baba made short crust pastry for pyrizhky.  Here is a recipe and a few more just follow the link.

SHORT PASTRY FOR PYRIZHKY:

2 cups sifted flour
1/2 teaspoon salt
1/2 cup plus 2 tablespoons butter or shortening
1 egg yolk
2 teaspoons lemon juice
3 to 4 tablespoons ice water

All the ingredients should be very cold. Fillings should be cold. Sift the flour with the salt. Cut in the butter or shortening with a pastry blender until the mixture resembles a coarse meal. Combine the yolk with the lemon juice and water. Sprinkle the liquid over the flour and mix lightly until the dough holds together. Chill thoroughly. Roll the dough 1/4 inch thick and cut into squares or rectangles of the desired size. Have the filling ready. Place a portion of the filling in the centre, bring the edges together, and seal in a neat ridge along the centre. Place, sealed side up, on a greased baking sheet. Brush with a beaten egg diluted with 2 tablespoons of water or milk. Bake in a hot oven (400°F) for 15 to 20 minutes.

Here is a recipe for small buns served with dill sauce.

Cottage Cheese Buns

2 Tbsp. yeast
2 Tbsp. sugar
1 cup lukewarm water

3 eggs
1 cup water
6 Tbsp. oil
1/2 cup sugar
1 tsp. salt
6 to 7 cups flour, approx.

Dissolve yeast and sugar in 1 cup of lukewarm water. Let rise 10 minutes.

Beat eggs, add water, oil, and sugar and salt. Add yeast mixture. Add enough flour to make a soft dough. Cover, let rise, knead dough and let rise again. Pinch off small pieces of dough. Flatten with fingers. Place teaspoonful of filling on dough. Pinch together and shape into crescents on greased cookie sheets. Let rise for about 20 minutes. Bake at 325º F. for 15 minutes. Brush with butter.

FILLING:

1 pound cottage cheese (drain if wet) or use dry cottage cheese
1 egg
green onions, as desired to taste
1/4 cup dill, chopped or to taste
Salt and pepper to taste

Strain cheese through a sieve or blend cottage cheese and egg in food processor. Remove from food processor and blend by hand the chopped green onions, dill and salt and pepper to taste.

DILL SAUCE:

1 small onion, chopped
1/4 cup dill, chopped
2 Tbsp. butter
2 cups whipping.

Saute onions and dill in butter. Add whipping cream, simmer for 15 minutes. To serve, pour dill sauce over warm buns.

Makes about 3 dozen buns.

Baked Dumplings

Here is a recipe I found for baked dumplings using boiled varenyky/perohy.

Place the boiled well drained varenyky in a buttered, shallow baking dish.  Cover them with sour cream or the dill sauce.  Dot with butter and fine bread crumbs or finely grated cheese (depending on the filling). Bake at 350º F. for 25 minutes or until the top is lightly browned.

DILL SAUCE:

1 small onion, chopped
1/4 cup dill, chopped
2 Tbsp. butter
2 cups whipping.

Saute onions and dill in butter. Add whipping cream, simmer for 15 minutes.

Thanks so much for these recipes Olga!  I will try them as soon as possible!  I can't tell you how many variations I've tried, I'm going to keep trying till I get them right!  Thank you so much!

With easter coming I've got some work ahead of me! Wink
